Making eggs is easy, but making perfect eggs is an art. Here are some of the secrets.
Perfect Ramp Scrambler
3-5 Ramps
2 eggs
1 TBSP milk
Pinch of Salt & pepper
Butter or oil to coat pan
Grated cheese of your choice, I like a good Romano
Optional:
Your choice of vegetables, such as peppers, mushrooms, tomatoes, fiddleheads, etc. sliced in bite-size pieces
Melt butter in a skillet. Chop ramp bulbs & stems into thin slices. Set leaves aside.
Saute bulbs with non-leafy vegetables of your choice over low heat till bulbs begin to become translucent. Set aside.
Gently whisk together eggs, milk, salt & pepper till just combine. Do not over work.
Pour egg mixture into the buttered skillet over low heat.
Use a wooden spatula or spoon to push mixture from the edges of the pan to the center.
When pushing eggs begins to leave an empty space behind them in the pan, add sautéed ramps & vegetables. Slice ramp leaves & begin to fold them in.
When glossy but no longer runny top with grated cheese & serve immediately.
