Maple and Goat Cheese Roasted Squash

Ingredients:

For Roasting:

1 small squash

Salt and pepper to taste

2 tsp bourbon barrel aged maple syrup

1 tsp olive oil

For Filling:

1/3 cup rice (cooked)

1 4 oz package goat cheese

3 tbs maple syrup

Salt and pepper to taste

1 tsp lime juice

mini bell peppers and basil for garnish

Cut open squash and remove seeds. Rinse, then spread oil, maple syrup salt and pepper over cut side. Roast at 450F for 45 minutes or until done.

Mix up goat cheese, maple syrup, salt, pepper and lime juice in a bowl. When pumpkin is cooked, remove from oven and fill half way with rice. Top with goat cheese mixture. Return to the oven for 5 – 10 minutes to heat through. Top with mini bell pepper slices and basil, serve hot!
