Maple and Goat Cheese Roasted Squash


1 small squash or pumpkin

Salt and pepper to taste

2 tsp maple sugar

1 tsp olive oil

1/3 cup rice (seasoned)

1 package goat cheese

3 tbs maple syrup

Salt and pepper to taste

Lime juice to taste

Cut open pumpkin and remove seeds. Rinse, then spread oil, salt and pepper over cut side. Sprinkle with maple sugar and roast at 450F for 45 minutes or until done.

Mix up goat cheese, maple syrup, salt, pepper and lime juice in a bowl. When pumpkin is cooked, remove from oven and fill half way with rice. Top with goat cheese mixture. Return to the oven for 5 – 10 minutes to heat through.
