Ginger Maple Granola Bars

ingredients

2 cups oats

2 cups seeds

2 cups dried fruit and chocolate chips

*Remainder of sauce

Sauce:

3.5 tablespoons peanut butter

2.5 tablespoons butter

1 cup maple syrup

1 teaspoon cinnamon

2 tablespoons maple sugar

¼ teaspoon salt

½ teaspoon vanilla

Bake oats and seeds on a tray for 10 to 15 minutes at 250F until lightly browned.

While those are baking, make the sauce. Mix the maple syrup and sugar together and heat on medium heat until it begins to simmer. Add in butter and peanut butter. Once it is all melted and begins to foam up, take it off the heat and add salt and vanilla. Cool slightly.

Mix all ingredients together (seeds, oats, fruit, chocolate chips sauce)

Line baking tin with parchment paper and push mixture firmly into pan. Flatten on top and bake at 300F for 20-30 minutes.

Cool for at least 3 hours before cutting into squares. If you cut too soon, they will crumble and not stick together.
