Winter Citrus Salad with Maple Lavender Dressing

This salad is a perfect side, breakfast or snack, and a great way to try some of the special varieties of citrus only available in winter.

Maple Lavender Dressing:

1 C water

1/4 C B&E's Bourbon Barrel Aged Maple Syrup

1/4 C Dried Lavender

Bring water to a boil.  Remove from heat.  Stir in syrup and lavender.  Steep for 15 minutes, strain & cool.  This concoction can be stored in the refrigerator up to one month.

Citrus Salad:

4 C. Assorted citrus, peeled & cut into bite size chunks. Good options include Pomelo , Blood Oranges, Clementines, Kumquat (whole or quartered, peel on) and Grapefruit. Minneolas can be a little too soft & juicy to hold up well in salad.  This is a great time to try all the unique, seasonal citrus that has piqued your curiosity!

Toss citrus salad with Maple Mint dressing, assuring all bites are well coated.
