Know your farmers

We purchased a 112 year old timber frame barn as our collective birthday present.  We're saving the historic structure from death & decay, and will be re-purposing it as our commercial kitchen and maple syrup aging cellar.

We take multiple samples everyday as we're cooking down the syrup.  This helps us choose the best flavor of syrup for our different products.
