Bacon Blue Rampotato Salad

A perfect potluck dish to pass.  Potatoes and Ramps are not ripe at the same time, so it can be made with frozen ramp bulbs & leaves

Bacon Blue Rampotato Salad

4 slices Bacon

1 C Ramp Bulbs & Stems, sliced

Leaves of above ramps, sliced in 1 cm strips

3 medium Potatoes, cut in bite-sized pieces with skins on

¼ C Olive Oil

3 TBSP Vinegar

½ tsp Salt

1 tsp Pepper

¼ C Blue Cheese Crumbles

Fry Bacon with Ramp Bulbs & Stems.  When nearly done, add leaves & heat till bright green.  Remove from heat.

Boil Potatoes 12-15 minutes till cooked but not mushy.  Drain.

Combine Oil, Vinegar, Salt, Pepper, & Blue Cheese. 

Crumble Bacon.  Add Bacon & Ramps to oil mixture.

Pour oil mixture over potatoes.  Toss till combined. Serve hot or cold.
